Day88 - Mini bursts of crazy happiness.

Friday, March 28, 2008: My Kitchen: Mini Cheesecakes.

Jenn came up tonight to help me cook tons of food for paintball/Troy's birthday. Somehow, when making these little nuggets of happiness the first time, we all ignored the oven buzzer and they turned to charcoal. After a trip to the grocery store, some more washing of dishes and more cooking, we managed to successfully turn out 36 perfect mini balls of heaven.

I want to eat through the screen. And crazy easy when you pay attention.

Heat oven to 325.
Mix (2) 8oz packages of cream cheese, 1 1/2 cups sugar, 1 TB of lemon juice, 1 TB of vanilla until smooth.
In 36 cupcake wrappers place 1 Vanilla wafer in each.
Fill cup 2/3 full with cream cheese filling.
Bake for 15 minutes.
When cooled, cover with pie filling or fresh fruit of your choice.
Eat many until your stomach explodes.

One is the perfect amount really. Scratch that. Two is perfect. Three pushes the limits of greatness. They did not go over as well as these little rays of sunshine, but they did alright. But then again, cheesecake is not always a good match for beer which is where the night was heading by the time I pulled them out.
